CRAB POTATO AND LEEK ROSTI.

 

8OZS 225GRAMS MIXED CRAB MEAT

5OZS 150GRAMS POTATO IN IT’S SKIN (WAXY)

TEASPOON OF GRAPEFRUIT JUICE

GRATED GRAPEFRUIT ZEST (HALF TEASPOON)

3OZS 100GRAMS THIN SHREDDED LEEKS

PARSLEY FOR DECORATION

Boil potatoes (approx 10 mins)

The potatoes should be still firm or undercooked.

Allow to cool.

Sweet the shredded leeks for 30secs to 1 min.

Mix all the ingredients (except potato) together in a bowl.

As soon as you can handle the potatoes, peel it and grate it in to the bowl with all the other ingredients.

Mix well and make small ball/cakes this should make 8.

Put on to a lightly oiled tray and put in the fridge.

Allow at least 2 hours.

Fry off in a little olive oil, serve as a snack or a starter.
