Boil potatoes (approx 10 mins)
The potatoes should be still firm
or undercooked.
Allow to cool.
Sweet the shredded leeks for 30secs to 1
min.
Mix all the ingredients (except potato) together in a bowl.
As soon
as you can handle the potatoes, peel it and grate it in to the bowl with
all the other ingredients.
Mix well and make small ball/cakes this should
make 8.
Put on to a lightly oiled tray and put in the fridge.
Allow at
least 2 hours.
Fry off in a little olive oil,
serve as a snack or a starter.
